My kids love this recipe for a baked pancake. It provides them with a hearty pancake breakfast that is so simple you can serve it on busy mornings.
Start by using a good, sturdy frying pan. I like to use my grandmother's cast iron pan. But, if you don't have one, any good frying pan will do. Start by preheating the oven for 400-degrees. Place 2 tablespoons of butter in the pan and put the pan into the oven. This will allow the butter to melt while you prepare the pancake batter. Next, in a large bowl, combine one half cup of flour, three eggs, one half cup of milk and one-quarter teaspoon of salt. I also like to add about one teaspoon of vanilla extract. Once the butter is melted, pour the batter into the frying pan and bake the pancake for 25 minutes.
Once the pancake has cooled, serve it straight out of the frying pan. Cut it like a pie and serve with butter and syrup. Simple and hearty.
