Fabulous Feta Chicken
TheSouth Beach diet focuses on using the glycemic index and lean meats. Instead of having plain baked chicken, spice it up with some feta cheese.
Always look for low fat cheeses and skinned chicken.
1 pound of boneless, skinless chicken breast
2 tablespoons of lemon juice
1 container of reduced fat feta cheese
¼ cup of green and red pepper
- Heat oven to 350.
- Layer chicken in 13*9 baking dish.
- Sprinkle with lemon juice.
- Layer with feta cheese.
- Bake for 40 minutes.
- Sprinkle with red and green peppers.
- Serve with vegetables.
