Flavor Your Life Gives a Secret Look into the World of Olive Oil Production

The European Union funded campaign Flavor Your Life, which is dedicated to providing the latest in olive oil news, gives an up-close look into the olive oil production processes, including the Tuscan olive oil production processes

Olive oil production is an industrial process where oil is extracted from the olive fruit. The oil can be found in the lipovacuoli of the mesocarp cells in the pulp of the olive. The actual extraction of the juices from the olive fruit takes place in an oil mill. There are two important phases that must occur during extraction: the grinding/crushing of the olive fruit and the separation of the oil, which transforms it from a solid to a liquid.

The production of extra virgin olive oils is somewhat different compared to other olive oil grade production processes. Extra virgin olive oils contain the raw material of the olive fruit. They are extracted by purely mechanical processes that requires impact, pressure, centrifugation, decanting, filtration, surface tension and the mechanical treatment of the emulsions, whereas lower grade oils use chemicals and/or mechanisms that cause heat.

Here is a list of the steps for preparing olives for production and extraction:

- Milling is used to break the cell walls and drain the juices. Olive paste is typically produced in this step. Olive paste is composed of oil, water and solids.
- Kneading is used to mix the olive paste with water, which facilitates and propels the emulsion, thereby churning the water and oil in preparation for the next step.
- Extraction is used to separate the liquid oil from its solid form.
- Water-oil emulsion is also known as oil must. It contains a solid residue, known as sludge, which remains in suspension in the emulsion.
- Separation of olive oil from the water.
