Ark-La-Tex not getting enough fruits and veggies

SHREVEPORT, La (KSLA)- Most people in the Ark-La-Tex still don't eat vegetables often enough, and fruit consumption is actually dropping a little, according to a new government report released Thursday. The Centers for Disease Control and Prevention found that last year about one-third of U.S. adults consumed fruit or fruit juice at least twice a day. That's down slightly from more than 34 percent in 2000.

KSLA News 12 spoke to a local produce vendor who says he's eaten vegetables all his life. He gave us this recipe to help sneak veggies into unhealthy diets.

Ray Lemoine's Famous Creole Chicken


  • 1 whole chicken
  • one clove of garlic
  • 1/3 stick of butter
  • 1/2 cup bell peppers
  • 1/2 cup celery
  • 1/2 cup green onion

Cut, skin, and wash the chicken. Put the chicken in a two quart pot with salt and pepper to taste. Add the garlic, bell pepper, celery, green onion, and butter to the pot. Simmer for 45 minutes.

Lemoine says the keys to the Creole chicken are:

  1. DO NOT raise the lid before the 45 minutes are up.
  2. Don't add water. "It'll look dry, but it'll be falling off the bone when it's finished cooking," said Lemoine.
