Cranberry Salad Mold

  • 20 ounce can crushed pineapple, drain, and reserve juice
  • 2- (3 oz.) pkg. raspberry gelatin
  • ¾ c lemon lime drink or ginger ale
  • 1 whole granny smith apple cored and diced
  • 1 c celery, chopped
  • 1 can (16 oz.) whole cranberry sauce
  • 1/2 c. pecans, chopped
  1. Drain pineapple, reserve juice.
  2. Add enough water to the juice to measure 1 ¾ cup.
  3. Bring to a boil.
  4. Pour over gelatin in a bowl, stir to dissolve.
  5. Add ginger ale.
  6. Refrigerate until slightly thickened.
  7. Stir in pineapple, apple, celery, pecans and cranberry sauce.
  8. Pour into 6 cup mold, refrigerate, covered until firm, several hours or overnight.
  9. To serve, unmold onto a platter lined with leafy greens if desired.
